It's prized for its taste more so than its tenderness. Since skirt steak is easy to dry out, the best cooking method is fast and on high heat. You could also marinate it overnight to add extra moisture. Enjoy skirt steak tacos, fajitas, or with a chimichurri sauce with your favorite roasted vegetables.
