This roast comes from the hindquarters of the cow.
Sirloin Tip Roast is best for braising or stewing. Preheat the oven to 350°F. In a Dutch Oven, brown the roast on all sides. Remove and add yellow onions and garlic cloves. Cook until translucent. Add the sirloin tip roast back to the pot with carrots, beef stock, red wine, thyme, and rosemary. Season with salt and pepper. Cover and cook in the oven for about 3 hours.
