Tougher cuts like beef shoulder are excellent for pot roast because cooking them low and slow makes them tender. Keeping the heat low and the lid of the pot tightly on helps keep the moisture in: the beef will cook in its juices, and you'll end up with a deeply beefy flavored roast!
