After cleaning and cutting, soak the kidneys in a solution of water and salt, or milk in the fridge for 2 hours or overnight. A fricassee is a wonderful way to cook them. Dry the kidneys and saute them on high heat in butter for 2 minutes. Remove from pan, and add more butter. Reduce the heat and add mushrooms. Cook for a few minutes, then add the kidneys and tomatoes. Cook for 3 minutes, then add stock and cream. Season with salt and pepper and cook for another 4 minutes. Add parsley and serve over roasted potatoes.
