Our petite tender steak is naturally pasture raised and comes from 100% grass fed and finished cows that are antibiotic free, hormone free, corn & soy free, and GMO free.
Petite Tender Steak is also known as bistro filet or petite tender medallion.
Petite Tender comes from the blade of the shoulder (Teres Major).
It is second only to the filet mignon in tenderness and is said to be "white-tablecloth quality". It is seldom used, as it requires skill to extract and weighs only 6-8 ounces.
It's best seared fast and over high heat and rare in the center.
