Petite Tender comes from the blade of the shoulder (Teres Major).
It is second only to the filet mignon in tenderness and is said to be "white-tablecloth quality". It is seldom used, as it requires skill to extract and weighs only 6-8 ounces.
It's best seared fast and over high heat and rare in the center.
