Oxtail is ideal for slow cooking.
It's comparable to short ribs but is actually more tender. Slow cooking is the best method for this cut. It's gelatin-rich and makes the most delicious stock. Oxtail is very popular in the Caribbean, where they make soups, stews, and curries with it.
