This cut comes from the shoulder chuck roast.
There is a good amount of marbling on flat iron steak which makes it very tender and packed with flavor. It’s perfect for the grill: high heat + short cooking time. Marinade overnight, then throw it on the grill. You can also make steak tacos or a delicious steak sandwich.
