Our beef cube steak is naturally pasture raised and comes from 100% grass fed and finished cows that are antibiotic free, hormone free, corn & soy free, and GMO free.
This cut comes from the top round or top sirloin. We pound the meat with a waffle hammer to separate the fibers.
Cube steak is also known as cubed steak or minute steak. It’s a versatile cut that’s ideal for sauteing, pan-frying, or braising.
A popular recipe for cube steak is country fried steak. It is a classic southern dish made by dipping the steak in a flour mixture with seasonings of your choice (salt, garlic powder, onion powder, freshly ground pepper, etc.), then into an egg and buttermilk mixture, then back into the flour mix.
Pan-fry in the cooking fat of your choice. Once it's done, remove excess oil and add butter to the pan to make gravy from the drippings. When the butter melts, add flour and whisk until it is smooth and it turns golden brown. Slowly whisk in milk and heavy cream. When it thickens, season with salt and pepper. Add freshly chopped parsley. Serve over the country fried steak with mashed potatoes.
