Beef Finely Sliced Ribeye ( aka Chipped Steak)

Our Finely Sliced Ribeye is our premium grassfed beef for making Beef Carpaccio and Philly Cheese Steaks.

Most chipped steak producers don't clearly identify if this cut is from the Sirloin Tip, London Broil, or Bottom or Eye Round.

Our Chipped steak comes from the most tender Ribeye cut. This cut is created by first freezing the meat, so it can be thinly sliced. We do this for you, so you don't have to worry about cutting yourself trying to slice it thin enough.


What is Carpaccio?

Carpaccio is an Italian dish centered around raw meat, originally beef but now you may see other versions such as tuna or salmon. It’s sliced or pounded very thin and served raw as an appetizer or light lunch. Add capers, sea salt, ground pepper, arugula, and a small drizzle of cold-pressed olive oil and red wine vinegar. Eat immediately. I mean, how could you even resist???

Philly Cheese Steak is also known as sizzle steak.

Caramelize some onions in tallow, remove from the pan, and quickly sear the chipped steak. Don't over cook it!! Get your favorite crusty bread, add a layer of onions, then beef, and add a hefty layer of raw mild cheddar (or any one of our cheeses). Put under the broiler until the cheese melts.
