This cut comes from the bottom half of the pork leg.
This cut is mostly bone, fat, and tendons, but there is a small amount of meat. It would be a great addition to soups, stews, or stocks; anything that needs to be cooked low and slow. Try adding it to split pea soup or collard greens.

Our pigs are born and pasture-raised outdoors on 500-acres of grass, herbs, and grubs at Burke's Garden Farm. Free roaming pigs are the happiest and healthiest pigs. And, they produce the most nutritious pork possible.
In addition to what they root for, they are supplemented with a small amount of chemical-free corn, small grains, and minerals.
Our pork is either washed in organic apple cider vinegar or not washed AT ALL (most butchers wash in chlorine bleach, citric, or lactic acid). Thus, no chemicals the whole way, not on the pasture, not in the pigs, not in the feed, and not in the washing which makes clean, healthy, pork for you and your family.
